An emulsifying agent is a molecule that promotes the dispersion of one substance in another. Emulsifying agents areused to cause the interactions of hydrophobic and hydrophilic substances. They do so because their structures contain both hydrophobic and hydrophilic groups. Taurocholicacid is a bile salt, an emulsifying agent produced in the liverthat promotes fat digestion in the intestine. Its structure contains the amino acid taurine.
