Introduction:
Olestra is a sucrose polyester that is synthesized when the 18-carbon fatty acid (oleic acid) reacts with all the hydroxyl groups of sucrose (esterification). This reaction takes place in the presence of catalysts. It is used in the manufacturing of certain snack foods. The chemical configuration of olestra accounts for the indigestibility of the molecule, and thus it provides no calories.
