When the proteins become denatured, they are more accessible by the proteolytic enzymes as substrates for the proteolysis process than are natural proteins.

A protein has a 3-dimensional structure that is not accessible to the proteolytic enzymes. It happens because the proteolytic enzymes cannot act on the peptide bond when the proteins become denatured. Denatured proteins are therefore more accessible as substrates for the proteolysis process than are the natural proteins.
