Chapter 5, Problem 5RQ
Summary Introduction
The importance of water activity for microbial growth and the factors that change the water activity.
Introduction:
Water is essential for the growth of living organisms as most of the nutrients are present in dissolved form within water bodies. Most importantly, water molecules supply oxygen by their breakdown in hydrogen and oxygen. Water activity is the partial vapour pressure of the water present in the substance and that water is free for utilization. The water availability is also measured by the water activity.
