Chapter 12, Problem 16P
Interpretation Introduction

(a)

Interpretation:

According to the figure, the red line shows the fluidity of fatty acid as a function of time and the blue line shows the fluidity of fatty acid in assistance with cholesterol. The effect of cholesterol on the fluidity of fatty acid needs to be explained.

Concept introduction:

Cholesterol is a rigid steroid ring which interacts with fatty acid chains at high temperature and reduces the mobility of the phospholipids. But at low temperature, cholesterol presents molecules from getting packed tightly and thereby increasing membrane fluidity.

Interpretation Introduction

(b)

Interpretation:

The biological importance of the effect of cholesterol on fluidity needs to be explained.

Concept introduction:

Fluidity is less sensitive with temperature change due to cholesterol. This effect is often likely because of interaction with the fatty acids hydrophobic tails.
