Introduction:
Glands of the stomach secrete Hcl and other enzymes which aids the digestion of tripe and other meat readily. It seems that the stomach would digest itself; however the stomach is protected from self-digestion in following three ways, mucous coat, tight junctions and epithelial cell replacement.
