Abstract: What we are testing in this lab is the effect of inhibitors on browning of enzymes. The fruits and vegetables are affected easily to browning because of interaction with polyphenol oxidases. We start by setting up an experiment to find out if the inhibitor is going to reduce of stop amount of browning in potato extract.
