Introduction

Proteins are composed of polypeptide chains. These polypeptide chains are made up of 20 different amino acids joined together via peptide chain.  It is the variable side chain group of amino acids that make them hydrophilic or hydrophobic. Among the 20 amino acids, 8 are hydrophobic , 5 are uncharged hydrophilic, 3 are basic and 2 are acidic. The acidic and basic amino acids are also hydrophilic. The rest 2 amino acids are glycine and proline whose side chain groups are considered special.
