As Michael Pollan details in his bestselling book, In Defense of Food, the science that attempts to understand and unlock the chemical secrets of food has resulted from the collective pursuit of many scientific minds since the early nineteenth century. Scientists strive for objectivity, a value that requires some elimination of variation in seeking to find the one truth. These basic foundational rules of science limit what can and cannot be recommended by the disciplines that science informs. Dietitians are also bound to the same rules of scientific understanding by the principal of evidence-based practice, and can only provide clients with what the science says at this time. Unfortunately, it is impossible to reconcile the understandings science currently has regarding the human body with optimal dietary recommendations.
The field of nutrition science has yet to understand many factors that allow it to optimize nutrition for every-body. The very nature of the human body is subjective; it cannot be narrowed down to one factor, as science demands and varies from person to person. In “Nutritionism Defined”, Michael Pollan uses a metaphor to construct an argument that shows nutritionism is defined by “empires.” Pollan shows that the “empires” are at war with each other. These “empires” are “refined carbohydrates versus fiber; animal protein versus plant protein; saturated fats versus polyunsaturated fats; and province of the polyunsaturates, omega-3 fatty acids versus omega-6s” (Pollan 492). The metaphor with these empires being at war with each other is able to show the reader that in the eyes of the consumer and their bodies, the nutrients are competing with each other to be the ultimate nutrient. People may enjoy getting together with friends, going to the mall, going to an amusement park or simply finding relaxation in nature. However, a big part of everyone’s life is of course eating and many people find pleasure in doing so. While nutritionism is suppose to scientifically guide us to eat healthy, Pollan points out that there is no scientific evidence to back it. Instead, he provides research conducted by Harvard nutrition scientist that proves the opposite. "In the public's mind [...] words like 'low-fat' and 'fat-free' have been synonymous with heart health. It is now increasingly recognized that low-fat campaign has been based on little scientific evidence and may have caused unintended health consequences." (Pollan 43).
