My reflection (paragraphs) on Garden Salad with Avocado Dressing recipe and how it helps to prevent cancer  For the Dressing: • 1 medium avocado, peeled, pitted and chopped • 2 tablespoons olive oil • 1 garlic clove, minced • 1/4 cup chopped cilantro • 1 scallion, thinly sliced • 1 tablespoon lime juice • 2 tablespoons water • 1/4 teaspoon salt For the Salad: • 5 ounces salad greens (spring mix, chopped lettuce, arugula, or baby spinach) A mix of all or some of the following vegetables, or vegetables of your choice: • 1/2 cup thinly sliced celery stalks • 1/3 cup thinly sliced red onions • 1/2 cup thinly sliced red bell pepper • 1 medium cucumber, sliced • 1 small carrot, grated • 1 cup grape tomatoes, halved • 1/2 cup chopped nuts or seeds, toasted (sliced almonds, pecans, sunflower seeds, pumpkin seeds)
