Peptides and polypeptides are linear and unbranched polymers composed of amino acids linked together by peptide bonds. Peptide bonds are amide linkages formed between α-amino group of one amino acid and the α-carboxyl group of another. This reaction is a dehydration reaction, that is, a water molecule is removed and the linked amino acids are referred to as amino acid residues. Peptide bond formation is an endergonic process, with G~+21KJ/mol.
