The source of the earlier European colonist anxiety about their diet comes from their limited understanding of genetics, diets, and overall human health of the time. In Rebecca Earle’s work “The You Eat Their Food…”: Diets and Bodies in Early Colonial Spanish America, the historian presents the ideals of the early European Settlers, mainly Spanish, on how food effected the human body and form. The work elaborates on the Spanish logic for the aliments of both the settlers and the indigenous people of the land, linking it to food. With limited scientific data and limited understanding of genetics the Spanish came to accept this theory that diet controlled physical appearance to the extreme of race, setting a trend for Spanish colonies and others. The supermarket that is described by Michael Pollan in “A Naturalist in the Supermarket,” is one that is distant with nature. We do not know where anything really comes from as he points out. Pollan tells us that supermarkets stages, so that their stores seem to be connected with nature, by displaying fruits, vegetables, and more in front to appeal to our senses. He says that the stores spritz the vegetables with “morning dew”, the only problem is that they are inside, and no morning dew exists. He writes very sarcastic throughout the essay, giving the idea that he does not appreciate how today’s supermarket works. If supermarkets were to follow the three rules that Nicolette Hahn Niman writes in her text, “The Carnivore’s Dilemma”, then the supermarkets could be changed.
In Lisa Miller’s essay “Divided We eat,” she describes her usual morning breakfast that consists of fancy foods and claims that she is a food snob. She then goes into detail about what her neighbor's routine is like, and what Alexandra Ferguson’s morning routine is like. Food is typically a big issue for these families and the parents will usually spend hours thinking about how they will feed their families. Miller and Ferguson later discuss that some children don’t get enough eat, and some of these children are within five miles of them. Miller then tells us that seventeen percent of Americans are food insecure. The income gap has increased and now more Americans are becoming obese because of this.
An Edible History of Humanity is a book written by Tom Standage. It was first published on in 2009 by Walker & Co in the English language. The book is divided into six parts covering twelve chapters. It talks about the civilization of man from Old Stone Age during hunting and gathering all the way to present-day day. In this book, Standage describes how the development of food production has contributed to the civilization of humans (Standage, 113). He also outlines the role of food in the existence of humankind. The main theme in this text surrounds’ the history of man painting food as the tool in industrial evolution, civilization and how it impacts wars, as well as ecological competition. It is in this context that the ways of the Spanish and English colonies varied when it came to settlement and survival on the land in the New World. European exploration, in its entirety, is a complex subject with many causes and effects. In the attempt to break away from their previous home, colonists experienced a novel mixing of a variety of life, people plants and animals included. Africans, Europeans, and Indians all became acquainted in a new medley of a society. Each group, all with a unique cultural background, found a common identity as Americans due to the many new encounters and new neighbors. This was the beginning of the melting pot America is today. With “profit-seeking and soul-seeking” as the motive, Europeans concentrated the many cultures in young America.
“Earthsicknesss: Circumnavigation and the Terrestrial Human Body” by Joyce E. Chaplin and “Fear of Hot Climates in the Anglo-American Colonial Experience” by Karen Kupperman both provide great insight on specific cases in which European exploration and colonization lead to drastic changes in timely practices related to health, diet, and daily life.
One of the most interesting questions to ponder: is can a link be drawn directly to show the causation of why and when countries adopted customs or habits that are now fundamental in the present day. With secondary sources, these correlations can be shown and provide statistics as proof, based upon analysis of important primary sources. The journal article The Columbian Exchange: A History of Disease, Food and Ideas is a secondary source detailing what occurred in the years after the voyage of Columbus and how both the New World and the Old World were affected during this period of colonization. An interesting perspective was given in this paper, unlike many others that describe the same topic, in which the authors chose to focus on how the Old World was affected more so than what transpired in the areas being colonized. There was an extravagant biological exchange of both crops and disease, which provided serious lifestyle changes for both Europeans and the native people of the Americas, and there were also consequences elsewhere in the world associated with the Columbus exchange in the years after its commencement. Secondary sources are also very important to historians and this is a source that is very well written, backed up by diagrams and detailed evidence found in primary sources.
The Spanish colonizers had a huge influence on the indigenous peoples of Mexico and Peru’s, culture, language, traditions, religion, even on their native food. One can say that this came into being shortly after Columbus discovered the New World. The Spanish conquistadors, who sailed with Columbus to the New World, were the first to leave their mark on the new territory. We still see some of these traditions in today’s society. The Spanish taught the Indians of their oral traditions of legends and jokes, music, food, beliefs, and customs. The Indians even picked up on their native tongue, Spanish, and used it as their own and still do to this day. There are many things in the Mexican culture which have contributed to the shaping and molding of the modern Latino society, such as the Mexican history, culture, language, religion, and traditions.
During the first week of class, four readings were assigned. One of the readings, “Food and Eating: Some Persisting Questions,” by Sidney Mintz, discusses the paradoxes of food. Although food seems like a straightforward concept, it is actually extremely complicated. According to Mintz, there are five paradoxes, including: the importance of food to one’s survival, yet we take it for granted, how people stick to their foodways, but are willing to change, whether the government should allow people to freely choose food or if they should protect the people through regulations, the difference in food meanings according to gender, and the morality of eating certain foods. All of these paradoxes give people questions to think about, making this an extremely philosophical look at food studies. It also mentions that food must be viewed through the cultural context that it is in, which became important in “The Old and New World Exchange”, by Mintz, and “Maize as a Culinary Mystery”, by Stanley Brandes. These discuss the diffusion of foods after 1492 in different ways. The Mintz reading gives an overview of all of the foods spread from the Americas to the Old World, and vice-a-versa, but does not go terribly in depth on the social changes and effects of specific foods. Brandes focuses on the cultural impact of specifically maize on the European diet, noticing that most Western Europeans shunned it. He studies the cultural implications of this, concluding that maize was not accepted
