1.1 Literature Review
1.1.1 Market Segmentation Market segmentation is a marketing concept, and it is based on the customer needs and wants. The objectives of the concept is to let customer satisfy with what they wants and to understand of customer preferences and produce the product and service. Customer satisfaction is an important factor for the restaurant because it is how they going to survive in the restaurant industry. Basically to understanding of the social, economic and, to a limited extent, psychological location of the consumer (Salim, A, T., Rahmat, H., Karuthan, C., & Mukesh, K. 2012). The objectives are to let the satisfaction level become higher which based on effectively and efficiently. To identify the market is by a variety of technique and methods, there is market segmentation and target segmentation. It is differentiate based on different type of services, price offered, market orientation, type of establishment, variety of menu, food specialization, style of operation and ownership (Lawson, 1994 in Othman and Don, 2008). Basically in Malaysia, casual dining and fine dining restaurant are included in full service restaurant based on (Euromonitor International, 2012c) because it provides waited table service for customer (Gregoire and Spears, 2007). Meanwhile fast food restaurant consider as quick service restaurant because they produce quick order, quick production and quick pick up. Nowadays, in the food & beverage industry have many different type of restaurant raising up, it is because changing of lifestyle. The moderate growth rate of the restaurant industry results in many competitive rivalries and the nature of business allows customers to switch freely. Therefore, among porter’s five forces, the pressures from substitute products tend to drive the most competition in the restaurant industry today (Restaurant 2015). In addition, restaurants face the threat of customer’s ability to choose other leisure activities such as going to the movies, bowling, or other social outings (Restaurant 2015). In New Mexico it is very easy to find a restaurant that serves “Latino” themed food. Often, these restaurants put their own spin into the food and it becomes New Mexican. However, if you look hard enough, you may find authentic food from other Latino countries. There are MANY restaurants in Albuquerque and they all serve delicious and unique meals. For this assignment I wanted to try something new and indulge in unique tastes that I will remember for years. I meticulously researched restaurants on Google and found one that caught my attention. Its name is Havana Restaurant. It is in Daskalos Shopping Center off Menaul and San Mateo and its hours of operation are 11 A.M. to 8 P.M (Google Search: Havana Restaurant Albuquerque).
Ecological approaches focus on both population and individual level determinants of health. Ecological approaches mainly consider health issues as a community based problem and not just individual, this helps to improve community health and reduce health concerns. Unlike the behaviour change model, by focusing on a community, ecological approaches reduce the idea of singling out individuals which is more beneficial and may make the approach more successful.
My friend and I woke up one morning and decided to go to one of the best breakfast diners in Monroe County, T’s Family Restaurant. It is located in the Webster Plaza off of Hard road, right next to BJ’s. The neighborhood is pleasant, however the plaza looks almost rundown and gloomy. Some of the lots are vacant, and the parking lot needs to be redone with all the potholes scattered everywhere. On the other hand, T’s Family Restaurant building looks well taken care of. Also, there is plenty of parking spots, so there is no need to leave early to find somewhere to park your car.
The class COM 231 overall has helped me in many different ways throughout. I personally feel like I’ve learned many new things as well. Going into the class I thought I was going to have to surmount a big conflict because public speaking isn’t one of my strongest suits. I do always recommend this class to all of my peers because indeed it does help with public speaking. Through the class I have improved skills, learned new ones, and even had some tough moments.
I liked this simulation more than the last one we did. By being able to pull multiple levers simultaneously, the simulation felt more strategic and realistic.
A restaurant is an establishment where refreshments or meals may be obtained by the public; a public eating house (Merriam-Webster, 2015). The initial notion of selling food for profit dates back to as far as the earliest civilisation. Restaurants were a place that people would come to eat, drink and socialise as recognised by the French Revolution. In the early to mid-18th century, only taverns and inns sold food and drink. There were no menus or even options to choose from, the choice of food that would be served on differing nights would be determined solely by the chef. The food they served mainly consisted of boiled or roasted meat broth, served without sauce or seasonal vegetables. The word ‘Restaurant’ itself derived from a French word that describes this particular boiled or roasted meath broth that they served. Overtime, restaurants developed an established concept that steered away from the traditional inns (which were usually located in the middle of the countryside, providing meals to travellers) and provided seating to customers at their own tables, and a menu from which patrons could choose their own dish. Using the geographic segmentation approach, they have divided the market into two segments rural and urban, of which they serve the urban. Behavioral segmentation divides the market according to attitudes, they have located themselves at strategic positions and provided ambience in the restaurant to satisfy different temperaments of people. In employing psychographic segmentation, they have divided the market on the basis of lifestyle preferences. In using price segmentation, they have divided the market in lines of luxury, economy, and value.
When it comes to dining-in at a restaurant we all want the best service that we can get. When I think of “the best service” I think about the cleanliness, nice waitresses, good food, and affordable prices. There are so many different options when a family thinks about going out to eat, especially if they have small children. It’s often hard to go to a nice dine-in restaurant because sometimes it’s hard to find something on the menu for everyone in the family. I have experienced many things at two completely different restaurants. I can say Demos’ is better than Logan’s because the food and service is much better.
This restaurant service evaluation paper will take a look at one of Orlando’s most popular casual dining spots, Miller’s Ale House located at 5573 Kirkman Road, Orlando, Florida. Miller’s Ale House motto is “Welcome to Our House” suggesting a fun, warm, and inviting atmosphere. Market segmentation as a term came up to describe the concept that all customers are not alike. Because in hospitality industry marketing money and resources are limited, it has to concentrate on specific groups of people, or target market, to avoid waste in time, money and quality. As a result, it’s ensuring the highest returns. [1 pp19] The reasons why segmentation is so important for hospitality industry are – more successful use of marketing money, clearer perceptive of the needs and wants of special customer groups, more effective developing of service, greater correctness in selecting promotional vehicles and techniques. Market segmentation is an approach used by a company to select their target market and provide data for a marketing plan. “Market segmentation consist of a two-step process; naming broad product markets and segmenting these broad products-markets in order to select target markets and develop suitable marketing mixes” (Perreault, Cannon, & McCarthy, 2014, p.97). There are 4 categories pertaining to market segmentation; behavioral, geographic, demographic, and behavioral.
Once I stepped inside the restaurant I automatically could hear the music playing at a moderate level and the laughter of the customers. Right off the back the restaurant's ambiance had a positive vibe. Mindful, it was a Saturday late afternoon. Mary Jane Burger and Brew is a local restaurant trying to stay true to its past. The granddaughter of the original owner now runs the place with the intention of serving good quality food where the ingredients are fresh, mouth watering, and surely not filled with antibiotics and all that other genetically modified elements found in processed foods. The vintage, rustic looking place, holds a small town atmosphere with a big taste.
In order to market the product into the market successfully, marketers need to have some marketing strategy to enter the desired market and make profit. Market segmentation is the process of dividing a market into subsets of consumers with common needs or characteristics (Schiffman et al., 2011). Understanding the market size and segmentation is valuable, but the keys to effective targeting is to know just how valuable specific consumer groups are, and being able to quantify the impact of consumer trends ( Berry, 1999).
