Background Research Mold is formed when tiny spores land on a wet surface (it has to be organic) and uses the moisture to grow. It also needs warm temperature and oxygen to react with. Salt and sugar is used as a preservative because they absorb the moisture of the food. If a food doesn’t have moisture, then mold can’t grow on it. If a fruit/vegetable has less oxygen, then less mold will grow. Dehydration stops mold because if you dehydrate something, you take the moisture out. Mold needs moisture to grow, so if you deprive it of moisture, mold can’t grow. If the temperature is below 39 degrees, then mold can’t grow. Mold needs warm temperatures to grow.
