“The Lord hath created medicines out of the earth; and he that is wise will not abhor them” (Ecclesiasticus 38:4). This is one of my favorite bible quotes which summarizes my feelings (views?) about maintaining a healthy lifestyle, using food as medicine and balancing good nutrition. Throughout my life I made poor choices pertaining to my nutrition in part by cultural experiences and my personal lack of awareness. One of my biggest challenges growing up was digestive related in which, I have struggled with constipation most of my life. As I did my research in food science, I realized that much of what I ate had a direct effect on my digestive problems. Once I changed my diet, over the course of time, my digestive issues ceased. As a result of my personal experience, I gained wisdom regarding the importance of good nutrition.
I am interested in the Masters of Science in Nutrition and Integrative Health program offered at Maryland University Integrative Health. The unique holistic approach of the nutrition program is an aspect that I am very passionate about. I believe nutrition is a vital part of one’s well-being, and it plays an integral part in one’s overall longevity. In this essay, I will share with my interests in maintaining a healthy nutritious lifestyle, my long term goals both personally and professionally, and how an opportunity to obtain my masters in this program will fulfill my aspirations.

To determine the level of my fiber intake from a 3 day sample of my diet, I performed a Prospective Diet Analysis. On average, I consumed 22.3 grams of fiber, just missing the recommendation of 25 grams. Coherent to the findings of the related studies, my cholesterol intake decreased and by the third day totaled 124.5 mg, which relates to 42% of the Daily Recommended Intake of 300 mg.
My short-term goals are to enhance my knowledge of medical nutrition therapy, to gain experiences in all aspects of the dietetic field especially in clinical nutrition setting, and to become an RD. My long-term career goals are to become Certified Diabetes Educator, to engage and serve in community nutrition, and to promote wellness and preventive health care for socio-economically and culturally fragile populations. The U.S. population has become increasingly diverse in ethnicities and cultural backgrounds. Therefore, I believe that providing patient-centered education with respect on the differences of cultural, religious, and dietary practices are the keys to becoming a successful educator in nutrition counseling and education.

Proper nutrition is important in maintaining a long and healthy life. Most Americans are rushed due to their busy work schedules, and do not take the time to plan their diets properly. In life, many people participate in various daily events and activities that help them enjoy being who they are. People may enjoy getting together with friends, going to the mall, going to an amusement park or simply finding relaxation in nature. However, a big part of everyone’s life is of course eating and many people find pleasure in doing so. Since we have been learning about nutrition in class, our task was to record a food log. Nutrition requires a well-balanced diet containing nutrient and vitamins like amino acids and fatty acids. Over the past seven days I have been recording and have been looking very carefully at my intake of nutrients, minerals, vitamins, and fats.
