Health Nutrition Analysis With obesity spreading across America like a wildfire, it’s only logical that I’ve tested to see if I will one day fall into this quickly growing demographic. Moreover, in attempts of measuring my overall health, I’ve taken data over 24 hours over a typical school day not only to look at the types and amounts of activity but also the types and amounts of food I eat. To start off, as a high school student, I already spend around 7 hours sitting in a chair staring at teachers lecture for the majority of my day. In Vietnam, where my parents are from, there's a lot of fresh ingredients used in cooking and they really value fresh produce. Moreover, due to my parents background, their ideologies reflect on me through my mom's cooking. However, since I was born in America, I tend to also eat a lot processed foods such as triscuits and chex mix which are mostly empty calories. To combat these problems, I will try to cut the amount I eat by only eating them in moderation. By the means of which I will try to limit the amount of these empty calorie foods that I eat. Overall, my nutrition is quality is not terrible. Although I surpass all my intake goals, I might’ve been due to the calorie calculator I used. I was somewhat in a limbo between two levels of exercise so I am not shocked at all. After all, swimmers are known for a large appetite. However, this doesn’t stop that fact that I had double the daily recommended dose of sugar and high consumption of some of the 5 avoidables. My strengths in my One-Day Nutrition, is that I ate a healthy breakfast as I ate two scrambled eggs, hot black coffee, and a toast without toppings. I also measured the calorie intakes for my breakfast and lunch. This helped me make a better choice in choosing healthier foods to eat. Besides making a better choice it also helped me eat in smaller portions. I have a strong will in the day, in saying “no” to unhealthy foods, but unfortunately I do not in the evening.

With obesity now being considered an “epidemic” in the U.S, the chances of increasing the risk of diseases such as high blood pressure, type II diabetes, coronary heart disease, stroke, gallbladder disease, sleep apnea, respiratory problems, and osteoarthritis are through the roof. Because obesity is becoming an “epidemic,” it can also be found in all age groups, race, and education levels (Budrys, 2010, pp 93). Using the Body Mass Index (BMI), that measures body fat based on weight (in kilograms) divided by height (in meter squared) and is given in a percentage, is a way of calculating if the body fat is in an underweight (<18.5), healthy weight (18.5-24.9), overweight (25-29.9), obese I (mildly: 30-34.9), obese II (moderately: 35-39.9), obese III (morbidly: ≥40). The BMI signifies where our weight is compared to the ‘ideal’ weight based on our height.
The obesity rate in America has become a major national health issue over the last several decades. Increasingly alarming statistics have garnered national headlines. Current statistics place 68.5% of the U.S. population in classifications ranging from "overweight" to "super obese." Approximately 35% of all U.S. adults currently fall under the label of "obese".(Ogden, et al., 2014) Potentially more alarming is the prevalence of obesity in adolescents. U.S. youth are becoming obese at earlier and earlier ages. One out of six children ages 2-19 are now obese and fully one-third of adolescents are overweight or obese. Mini Nutritional Assessment. This scale is selected as the patient has an unintentional weight loss of 18. At the age of 65, the nutritional intake is an important aspect of the self-care. The specific screening scale selected is the Mini Nutritional Assessment short form (MNA-SF). This scale was designed for individuals that are at risk for malnutrition by screening for food intake, weight, mobility, psychological stress, neurological problems, BMI, and calf circumference (Simsek et al., 2014). With this, the rationale is to identify the problematic areas for interventions.
For Mini Nutritional Assessment, writer was privileged to have assessed and interviewed a male patient admitted to the Transitional Care Unit (TCU) who had spent twelve days in the unit for rehabilitation. The patient was admitted with chief medical diagnoses: heart failure, generalized weakness, and loose stool and patient had additional diagnoses prior to hospitalization: hypertension, metabolic encephalopathy and prostate cancer (he was cancer free). My patient is 80 years old whose weight 73.2kg and height 172.7cm respectively. Looking at patient’s current and health history and linking them together, one of the leading “causes of heart failure is high blood pressure” (NHLBI,NIH, 2015) which was part of patient’s health status and patient was currently taking medications like: Amlodipine, Furosemide, Hydralazine, Lisinopril and Aspirin.

On the 20th of February, I started recording the foods I ate, and see what kind of nutrition I'm getting from my food. With my current BMI, if I wanted to maintain my weight, I was to consume on average 2,590 Calories. The first day I exceed that by 735 Calories, but the next day I was under 145 calories.
Mushroom have been widely used as food and food supplements. It is an important food item concerning human health, nutrition and disease prevention. Dietary mushrooms provide a variety of medicinal properties and they are effective against certain life threatening diseases. Mushrooms are not true vegetables in the sense that it does not have any leaves therefore contain no chlorophyll, roots or seeds and really does not need any light to grow. It is a fungus which grows in dark and propagates by releasing spores. Mushrooms are found all over the world and have been a time honoured food in many cultures.
The subject I interviewed is a 51 year old Black male from Jamaica that is 5’10 and weigh 165 pounds. The subject is currently a military officer and travels over half of the month to various countries. The subject had a good knowledge of nutrient due to completion of a Food Science degree which several class in nutrient as part of the Food Science degree curriculum. The subject had a working knowledge of fortified foods and was able to name several. He said that the most common foods on his fortified food list is milk with vitamin A & D and cereal such as post whole grain cereal. He name foods high in vitamin A such as leafy greens, vitamin D such as fish, vitamin E he name various nuts, vitamim K again he said leafy greens and B 12 he just said meats in general or animal products. When ask do he take any type of supplements the subject responded yes that he take supplement do to aging and meal limitation due to his travel to various countries. Consuming a nutritious and well-balanced nourishment for an older adult is essential. Nutrient offers the human body different resources required for proper function. Therefore, depending on the activity level an older adult participates in is how much calories is needed in their body. Calories are the amount of energy in the drinks and foods older adults eat. According to the Academy of Nutrition and Dietetics (2015), an older female who is not active requires a 1600-calorie diet; fairly active requires a 1,8000 diet, and completely active require about a 2,000 to 2,200 diet. Furthermore, older males would require 400 more calories for each category because of their large frames and the amount of muscle mass they have in their body.
Obesity is a prevalent issue in modern society; around 90 million citizens are considered to be overweight in the United States alone (Johnson, Hayes, Brown, Hoo, & Ethier, 2014). According to the Center for Disease Control and Prevention (2014), symptoms resulting from obesity, such as diabetes or high cholesterol, are in the top ten leading causes of death in America. These high numbers can be attributed to low rates of physical activity along with minimal fruit and vegetable intake (Johnson, Hayes, Brown, Hoo, & Ethier, 2014). Many outside factors like food insecurity and remote environments contribute to one’s diet and exercise patterns, therefore increasing the prevalence of obesity in these populations. If these issues are not addressed, obesity rates will only increase, furthering the risk of premature death.
