Before I turned one, I was diagnosed with a life-threatening peanut allergy. It is scary to think that when I start college I will not have my parents home cooked meals knowing that everything is safe for me. In my college search I need to take into consideration how each school will deal with my allergy. On the UCONN Nutrition site, it says that they make every attempt to identify ingredients that may cause allergic reactions. In the dining halls they label items with possible allergy containing ingredients, but there is always a risk of contamination (Nutrition Dining Services UCONN). All the ingredients are clearly listed on the station menus in the dining hall. If a student is unsure about an item, one of Marist’s chefs will prepare that exact dish, ensuring it is safe (Food Allergy and Special Diets Marist College). In addition to that, Marist and Bentley obtain a My Zone pantry, which is a special diet kitchen. Only students that are medically diagnosed with a food allergy or a special diet are allowed inside My Zone. My Zone is not only a peanut and tree nut free kitchen, it is also gluten-free. Both schools give students the opportunity to be involved in their own allergen-safe meal preparation. They stock breads, breakfast foods, snacks, and desserts. Depending on the allergies and special diets of the year, items may be egg free, soy free, dairy free, etc. My Zone serves a 7- allergen free hot lunch and dinner. Bentley University also has another program entitled Simple Servings. Simple Servings is similar to My Zone except that it is a station with food free from common allergies. Staff of Simple Servings are properly trained on how to prepare food with allergens to avoid cross contamination. This is important because I can still have a reaction from a food that does not contain peanuts, but simply by a trace of it in a different food. Bentley possess seven business majors: accounting, computer information systems, corporate finance and accounting, economics finance, finance, marketing, and professional sales (Majors Bentley University). Current business students said that the business education at Bentley is “well-rounded,” and offers “connections to many alumni throughout the state”’ (Bentley University Ranking and Recognition). Bentley is proficient in Information systems to create employees that businesses want. Without professionals that can build information systems, companies can not create and market products, manage their operations, or plan for the future (Bentley University CIS). Working as a loss control consultant for XYZ manufacturing company, various aspects of information need to be acquired prior to visiting. Assessing procedures for safety awareness and loss prevention practices, while reporting outcomes, and then deliberating with the underwriters. Within XYZ manufacturing company these areas include the following topics: record logs, the number of workers, ergonomics, the hazard level, training and orientation plans, and previous work recovery programs. Sauk Valley Community College should have a track and field team for several reasons. SVCC use to have a track and field team. Sadly, they dropped it in the nineteen seventies probably because of the expenses. Track and field is a very popular sport that many students might want to take part in middle and high school, or even at college level. Track isn’t a very expensive sport. It is one of the cheapest sports to participate in. Track and field is also very popular sport in colleges in the two hour radius from Sauk Valley Community College. Bringing track and field to Sauk will bring about 40-50 new students each year. Also, this will make Sauk become a better choice of colleges in the area, because of the distance.

To better understand the students’ food habits at school we inquired about the set-up of the cafeteria. The cafeteria has multiple lines that allow for students to have a variety of selections. This includes a basic school lunch line that varies from day-to-day, an American food lunch line that serves food items such as hamburgers and French fries, and a Fiesta lunch line that serves Tex-Mex. Special meals may be served around the holidays. Breakfast and lunch menus were provided upon request. Furthermore, Nurse Munsey noted that there are a multitude of different food allergies throughout the school. The number of students enrolled in the schools kindergarten program has remained constant, however, the number of kindergarten students with severe food allergies continues to increase. The growing prevalence of severe food allergies in the kindergarten population requires a collaborative approach involving the school nurse, parents, and all members of the learning community (Schoessler & White, 2014).

As a dietitian’s assistant, I organized the nutrition and allergy database for over 1,000 food and beverage items served through the University's food service system. My work helped students with food allergies avoid consuming allergy-containing foods and enabled more students to make healthier choices at the campus eateries. In addition, as a cooperative extension practicum student I. My articles were distributed to communities all across the state of Georgia. my WIC clients are positively impacted by my work in ways such as: decreasing rates of overweight and obese children and increasing breastfeeding rates. My practice and experience combined with a responsible and self-reliant nature will allow me to contribute to the dietetic profession to further build the development, expansion and enhancement of community organizations and initiatives.
